Vancouver eatery provides education in addition to great eats.

Where: 540 Beatty St., Vancouver | 604-879-8588OK, not really. In fact, not at all. But, when I walked out of The Dirty Apron recently following the Vibrantly Vegan cooking class — well, I sort of felt like one.

Armed with a shared passion for food, and Sara’s expertise in business, Robertson recalls how his interest in teaching and community involvement further fuelled the idea to open a public cooking school. “We launched our first vegan class in 2016, and we continue to add new menus to our class schedule,” Robertson says. “We pay close attention to food trends and how they evolve, and noticed that plant-based eating was becoming more and more popular. And customers — in catering, the cooking school and deli — were also asking for more vegan and vegetarian options.

And, on the evening I visited The Dirty Apron for my cooking class, I certainly didn’t. In fact, by the time I exited through the large wood-and-glass front doors several hours after first stepping through them, the first thought I had think was, ‘Wow, I’m full!’
