EVERY ACCOMPLISHED athlete has a coach. I’m sure Tiger Woods needs help with his chip shot every now and again, and Serena Williams requires someone to return her serve. The same can be true of wine drinkers—and wine columnists, too. Even the most seasoned oenophile can use a refresher on the basics.

I was reminded of this fact a few weeks ago at a trade tasting, when I saw a young sommelier spit wine in a manner that could almost be described as balletic. My spitting technique certainly could not be characterized...
